Yummmers!

Last night I tried a recipe from Nicki's Kitchen. It was called Coconut Chicken and WOWWWEEE! It was good. I don't generally like most Asian foods other than our Americanized Chinese food. But this was delicious and oh so very easy. The ingredients were not hard to find either. The hardest would be the Thai fish sauce which I found easily in the ethic foods aisle at the commissary. Try it, you'll love it. She also has several recipes for avocados right now for those of you who like those. I'm not a huge fan of avocados, but I love guacamole. I think I mentioned it before but you should also try her Chicken and Leek Kabob recipe. TO. DIE. FOR.

Earlier this week, Dan and I celebrated the 9th "anniversary" of our first date (the second time around). All together... "Awwwwww". So I made a special dinner of Veal Saltimbocca. I adapted the recipe a little to include some fontina cheese and I noticed I accidentally bought fresh basil instead of sage, but it turned out great.
















For my dad's birthday I made my adapted recipe for Tunnel of Fudge cake and was a little disappointed. I found the outside parts of the cake a little dry. The inside is gooey and fudgey still but the recipe is just too nutty for me. I am a purist. But if you like nuts, you'll probably like this cake.

Oh that looks so yummy! I've been waiting for fall to try that recipe! Thanks for trying my stuff. I always love to hear if folks have tried it! That coconut chicken is seriously good. I got it from Realsimple.com I love their recipes almost all of the ones that I've tried are super easy and super good. I had to put that picture up too of our pres. I thought it was too funny. Japanese food for the most part is not spicy. Whatever spicey food they do have is from Korea or China. The spice to put on the kebabs is great but hard to find even here in Japan. Atleast the type that they have on the original recipe. I finally found it at a little traditional foods shop off base. However, that spice is totally not needed to enjoy the kebabs.

You MUST be a very good cook. I'm not so bad when I have plenty of time to play in the kitchen.
